  2. We have brined our turkeys for years, so many options and flavors to impart. I really like garlic, oranges, rosemary, and brown sugar. Absolutely the best way to roast turkey or chicken. Cooks Illustrated has some articles on dry salt “brining” too, haven’t tried it, but apparently, it is also effective.

    could use a plastic garbage sack and sit the turkey in a dish so it would not leak; then take out every so often before going to bed and rotate the bird in the sack to get brine evenly over all the bird.
