Festive Curried Chicken Salad Sandwiches

These festive chicken salad sandwiches will leave your mouth watering.

A few nights ago, my husband and I were at Costco around dinner time. I was just hungry enough to be dangerous… dangerous to my budget, and dangerous to anyone within elbow’s reach. While I waited painstakingly for the girl in front of me to pick up the blackberries she spilled (I mourned them too), K dashed off to the back of the store to grab a few forgotten essentials — namely Jalapeno Greek Yogurt and a rotisserie chicken.

We waited until we actually got home before descending upon the chicken like a pack of hungry wolves, gnawing on the drumsticks like… well, like they might disappear in front of our eyes. Of note – they did disappear, but not because of any force outside of our own hunger.

Surprisingly, we had quite a bit of chicken leftover, and tonight made chicken salad sandwiches. Not so surprisingly, they were delicious.

Festive Curried Chicken Salad Sandwiches

A delicious healthier entree made festive with brightly colored veggies.
Ingredients
  • 2 cups shredded chicken
  • 2/3 cup olive oil mayonnaise
  • 1/2 apple, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 tsp fresh ground black pepper
  • 1/2 tbsp curry powder
  • 8 slices bread
  • 4 lettuce leaves
Instructions
  1. Combine chicken, mayo, apple and bell pepper with the spices.
  2. Toast the bread – put two slices into each toaster slot so that the insides are softer.
  3. Top the soft side of one bread slice with lettuce and 1/4 of the chicken salad mixture.
  4. Top with a second piece of bread.
  5. Serve

Notes

To make even healthier, use boiled chicken instead of the Rotisserie leftovers we used, and/or replace mayo with Greek yogurt.
