I’ve been MIA for quite a while… a bad little blogger. Especially after I worked SO hard to build and rebrand my blog! Here goes an attempt at staying current. I’m in love with this quinoa coconut curry soup recipe. It’s awesome.

My goal is to make sure that my recipes get added online again and I will be documenting my return to blogging as I navigate the changes to the bloggy world, the challenges of this great new pint-sized adventure we’ve taken on, and the joy of cooking! šŸ™‚

In the meantime, without mincing words (or carrots), IĀ  will get right to this recipe, which is a delicious attempt to clean out our cupboards. It’s a delicious take on Thai food!

Quinoa Coconut Curry Soup

1/2 tbsp olive oil
2 tbsp curry paste (yellow)
2 tbsp grated ginger
1 can coconut milk
1 can water
1 c quinoa
1 cup grated carrots
1 cup chopped celery
1 tbsp Better than Bouillon chicken flavor
2 drops lemongrass essential oil (I use Young Living)
Salt and pepper

Mix first 3 ingredients over medium heat. Add coconut milk and water and stir well. Add other ingredients and let simmer until quinoa is cooked. The soup will thicken up and make a delicious side dish or nutritious lunch or small meal in and of itself. Garnish with cilantro and lime if you desire!
