I’ve been intrigued ever since I heard a friend going on and on about a pineapple rum sauce she’d found somewhere and how amazing it was on salmon. And, naturally, my favorite 7 week old helper and I decided we should put together some for dinner tonight.

It starts with a sauce and a marinade.

I feel like that phrase should be the opening line of a phenomenal novel. And it may one day, but I haven’t yet started writing it. Stay tuned… but don’t hold your breath. In the meantime, please enjoy this delicious meal. Sweet, tangy, and simply delicious.

Pineapple Rum Salmon

Delicious sweet and tangy marinade for salmon… and a sauce for whatever you like!
Ingredients
  • Pineapple Rum Marinade
  • 1/2 cup soy sauce, reduced sodium
  • 1/2 cup pineapple juice
  • 1/4 cup rum (or substitute bourbon or whiskey)
  • 1/2 cup brown sugar (I substituted molasses)
  • 1 tsp minced garlic
  • pepper to taste
  • Salmon
  • 1/2 cup Pineapple Rum Marinade
  • 1 16 oz filet of salmon
  • Serving Suggestions
  • 3 cups cooked quinoa
  • pineapple rings
Instructions
Pineapple Rum Marinade
  1. Mix all ingredients together.
  2. Let sit in fridge for 1 hour to allow flavors to marry, if time allows.
Salmon & Pineapple Rings
  1. Preheat grill.
  2. Set salmon filet upside down in glass dish filled with 1/2 cup marinade.
  3. Let sit for 2 hours in refrigerator.
  4. Place salmon and remaining marinade right side up in a tin foil boat and place on grill.[br] This helps keep your grill clean and allows remaining sauce to caramelize with the fish.
  5. Cook salmon for 10-15 minutes or until cooked through.
  6. Place the pineapple rings directly on the grill, one minute per side.
Notes
Serve salmon over a bed of quinoa, accompanied by pineapple rings. Refrigerate the remaining marinade in a glass jar to reuse, and/or to spoon over your favorite foods.
