Butternut Squash Chili – Gluten Free

This butternut squash chili recipe is easy and delicious. And, it can be made in a crock pot.

Butternut squash chili. It’s easy. It’s gluten-free. And, you can make it in a slow cooker. Plus it’s healthy.

As a delayed start to my new year, new me personal campaign, and a delayed start to losing the baby weight, I’m starting a 10-day cleanse that’s safe for breastfeeding mamas when you remove the evening tablets. So I did what any naturally minded mama would do, I hit Costco. And, loaded up on all kinds of delicious goodness, including butternut squash.

Today, I tossed this butternut squash chili in the slow cooker for a delicious, cleanse-friendly, gluten-free, healthy meal. YES, it would be great with bacon, or burger meat. BUT, as is, it’s a great vegetarian option, even without the bacon. I serve over quinoa, but brown rice would be tasty too.

Gluten-Free Healthy Butternut Squash Slow Cooker Chili
Ingredients
  • 1 lb cubed butternut squash
  • 2 bell peppers, roughly chopped
  • 2 cans black beans (no salt added), drained
  • 2 cans kidney beans (no salt added), drained
  • 1 can tomato sauce
  • 1 can diced tomatoes (no salt added)
  • 1 can diced tomatoes with green chilis (rotel)
  • 2-3 cups water
  • 1 tbsp onion powder
  • 1 tbsp adobo lime (no salt added) seasoning
  • 1 tbsp your favorite bbq rub
  • salt and pepper as needed for flavor
  • quinoa, prepared
  • 1 tbsp diced garlic (approx 3 large cloves)
Instructions
  1. Combine all ingredients in a large stock pot.
  2. Bring to boil.
  3. Simmer for 45 minutes.
  4. OR
  5. Combine all ingredients in large crock pot 3-4 hours on high or 6-8 hours on low.
  6. Serve over quinoa or brown rice.
