Taco Soup – Budget Friendly Slow Cooker Meal

Taco soup has become a staple in our house… with the new baby, we have had quite a lot of freezer and crock pot meals, for the simple fact that they are EASY! The need for easy food has only happened a few times in our lives, but when you need easy, easy is important. This taco soup is easy. When we make it, we toss a little of this and a little of that in, and I feel like the tiny chef in Ratatouille. But the base recipe is pretty awesome too! This taco soup could also be made as a freezer meal, but I find it’s pretty easy to toss in the ingredients in the morning, start the slow cooker, and go.

Easy to make crock pot meal sure to please everyone in your home!
  • Taco Soup
  • 1 lb ground turkey (or beef if you prefer)
  • 1 onion, diced
  • 1 can black beans (or beans of your choice)
  • 1 can corn, drained
  • 1 tbsp chili powder
  • 1 envelope ranch dressing mix
  • 1 envelope taco seasoning
  • 1 can rotel (diced tomatoes with chilies)
  • 1 can diced tomatoes
  • 1 small jar of salsa (optional)
  • 2-3 cups water
  • Toppings (optional)
  • sour cream
  • Tostitos scoops (other chips ok, but scoops work well for eating)
  • grated cheese
  • guacamole
In slow cooker
  1. Brown ground turkey and onions. Drain.
  2. In slow cooker, combine everything, adding enough water for the consistency you want. (Less water = chunkier; more water = soupier)
  3. Cook for 6-8 hours on low (or 3-4 hours on high)
on stove
  1. Brown ground turkey and onions. Drain.
  2. In stock pot (BIG ONE), add all other ingredients.
  3. Bring to boil, and reduce to simmer for 30+ minutes
