Tex Mex Chili – freezer meal
What do I love about this Tex Mex Chili recipe? Besides the fact that it’s delicious? It’s healthy! So healthy it knocks my socks off! Are you sold? I was!
Did I mention it’s a freezer meal? Prep, freeze and cook later–it’s a breeze!
Here’s the recipe!
Tex Mex Chili
1 lb ground turkey
2 cans black beans, rinsed and drained
2 cloves minced garlic
1 green bell pepper, chopped
1 onion, chopped
1 can (29 oz) diced tomato
16 oz salsa
1/4 cup chili powder
2 tsp cumin
Divide ingredients evenly between two one-gallon ziplock bags. Freeze. To use, empty one bag into crockpot. Cook low 6-8 hours or high 3-4 hours. Serve over brown rice or quinoa. Add toppings to taste.
*Optional: 90 minutes prior to end time, add quinoa to mixture and stir well.
Crock pots not your thing? Cook everything in a big stick pot for about an hour!
