Breakfast Burrito Freezer Meal

If one breakfast burrito is awesome, 30 of the must be more awesome. This breakfast burrito recipe is a definite keeper. Suggested by a friend, it’s become a staple in our house. You can definitely eat them hot and fresh, but they keep really well in the freezer and are a tasty alternative to packaged foods. Perfect for a fast healthy breakfast on the go, or a quick snack. Make ’em and freeze ’em.

Breakfast burrito freezer meals

1 bag country style hashbrowns
1 red bell pepper, diced
1 green bell pepper, diced
1/2 onion, diced
2 lb sausage
12 eggs
30 tortillas
Cheddar cheese

Cook potatoes and set aside. Cook sausage, move to side of pan and add veggies. Cook eggs and add to the sausage. Add potatoes to mix.

Warm tortillas in microwave, and add a scoop (1/2 cup) and cheddar cheese. Roll in tin foil. Freeze.

To thaw, unwrap from foil, and heat up in microwave, 30 seconds on each side.

Serve with sour cream, guacamole, and salsa or grab and go!

Variations are endless, but swapping half the sausage for 2# bacon is my next plan.
