Slow Cooker Chicken Fajitas – Freezer Meal

Chicken fajitas… let’s just stop and ponder that for a moment while we discuss my freezer. You may or may not have picked up on the fact that I have a recently discovered obsession with freezer meals. I also have a recently┬á rediscovered obsession with my FitBit… but that’s a story for another post. I’m working crazy hard to get healthy again. 18 months after my child was born, I finally feel like I can get organized enough to take control of my health… physically and emotionally. So you’ll be delighted to hear that this recipe is 24 Day Challenge-friendly, AND that it’s SUPER easy… and that it’s delicious. And… it’s a freezer meal… which makes it super easy to eat a healthy meal.

Slow Cooker Chicken Fajitas
modified from my Advocare 24 Day Challenge cookbook

2 boneless skinless chicken breasts*
1 medium onion, chopped
1 green bell pepper, sliced OR 1 bag of frozen sliced bell peppers and onion
1 jalape├▒o seeded and chopped
2 cloves minced garlic
1 T BSP freshly chopped cilantro
1 tsp chili powder
1 tsp cumin
1 tsp coriander
3/4 tsp sea salt (optional)
1 (10 oz) can diced tomatoes with green chili peppers (Rotel)
1 cup uncooked brown rice

Place all ingredients but the rice in a one gallon freezer bag and freeze flat. Pull out of freezer the night before, OR microwave for 30 seconds to thaw enough directly before emptying bag into slow cooker. Cover and cook on high for 4-5 hours or low for 7-8 hours. (I normally cook on low for about 5 hours and then high for one hour. Halfway through the cook time, add the brown rice and stir in. At conclusion of cook time, shred the chicken with a fork. Serve as is, wrap in a whole wheat tortilla, or create a lettuce wrap by wrapping in a large lettuce leaf. (If your schedule doesn’t allow for the addition of rice halfway through, simply serve over brown rice, or omit completely.)
*the original recipe called for 3 chicken breasts, but I operate using the Costco packs of 2 large chicken breasts

Additionally, I was inspired by my Breakfast Burrito Freezer Meal from last week, and wrapped the remaining fajitas in tortillas and foil. Some were stored in the refrigerator for dinner another night this week, and others in the freezer.
