Yep. You heard me right. Honey-Almond-Crusted Halibut. It’s pretty much as amazing as it sounds. This was MY first attempt at making this and I just created from scratch to mimic some flavors and texture I’ve experienced before. I think it’s just about perfect, though next time, I’ll remember to remove the skin prior to cooking.  This halibut fillet is fish that we (and by we, I mean, my husband, since I’m not a boating person) caught last summer. It’s a delicious, easy, healthy, and relatively quick recipe.

I’ve been focused on protein rich foods lately because as part of my recent focus on health – mental and physical, I started tracking my macros, and discovered I haven’t been getting enough protein. Enter halibut! It’s a great source of protein and nutrition and has so many endless possibilities. When I get (close) to enough protein each day, I feel so much better and able to conquer mountains.   1. Preheat oven to 400 degrees. Combine butter, honey and mustard and stir well. Dredge halibut through mixture and coat in almonds. Place into a greased baking dish and bake for 12 minutes. Check center of fillets and cook longer if needed. Serve!
